Breakfast for dinner with the highest amount of protein Jill could think to fit in a pan. Easy, healthy, made with flex ingredients, and a great way to clean out those leftover veggies.
2 large eggs
1/4 cup low-fat cottage cheese
A pinch of salt and pepper
Olive oil spray
2 cups baby spinach
Fresh herbs like parsley or chives, for garnish (optional)
Ground turkey, cooked first and tossed in
Any leftover veggies hanging out in the fridge
A splash of Peter Luger Steak Sauce, for seasoning
If you're going Jill's way, brown the ground turkey first and set it aside.
Whisk the eggs, cottage cheese, salt and pepper in a small bowl until smooth.
Mist a skillet with olive oil spray over medium-high heat and wilt the spinach, 1 to 2 minutes. Toss in leftover veggies and the turkey here too.
Turn the heat to medium-low, pour in the eggs, and gently push them toward the center as they set, about 2 to 2 1/2 minutes, until soft and just cooked.
Finish with herbs and a splash of steak sauce. Feel free to freestyle.
