Hydrating the proper way, in minutes, for less than the store-bought stuff. Fresh, delicious, and in case somebody overdid it the night before, it will also bring you back to life.
4 cups water (960 ml)
A 1- to 2-inch chunk of ginger, smashed and roughly chopped
1/2 cup fresh orange or grapefruit juice (120 ml)
1/4 cup fresh lemon juice (60 ml)
2 tablespoons fresh lime juice (30 ml)
1/4 teaspoon sea salt
1/4 teaspoon baking soda
2 to 3 tablespoons pure maple syrup or honey
Bring the water and ginger to a simmer in a saucepan over medium heat, cover, and let it go for about 10 minutes.
Pull the pan off the heat and stir in the baking soda and salt until dissolved. It will foam up for a minute, so keep an eye on it.
Stir in the orange (or grapefruit), lemon and lime juices plus the maple or honey.
Strain out the ginger and any seeds, then taste and add a little more sweetener if you like.
Sip it warm, or let it cool and store it in Mason jars or reusable glass bottles in the fridge.
