From Jill's kitchen
After a trip, or any week that went off the rails, this is what Jill makes. Ground meat, every vegetable in the house and 1 sauce. It's delicious, it's packed with protein, and she eats it for 2 to 3 days.
1 pound of ground beef, chicken or turkey
As many vegetables as you have. Fresh, a bag of frozen vegetables, or an entire bag of spinach (it shrinks down to nothing).
1 sauce: a pouch of Frontera taco skillet sauce, a jar of spaghetti sauce, or your favorite Asian-style sauce
Brown the meat in your biggest skillet, breaking it up as it cooks.
Add the vegetables. Frozen ones go straight in; spinach goes in last and wilts in a minute.
Stir in the sauce and let everything heat through.
Eat tonight, then again tomorrow, and maybe the day after.
The Roasted Root's version of the same idea, 1 pound of ground turkey with broccoli, carrots and spinach, comes to 32 grams of protein per serving, 3 servings a pound. Get The Roasted Root's recipe.
